A cursory look at recipe books published after the Second World War in Malta immediately indicates the sensory revolution that the Maltese experienced when indulging in their sweets. In 1955, the list of dessert recipes included: tea cakes, Turkish delight, marshmallow, lemon curd, and orange creams, among others. By 1961 additional varieties included: apple strudel, pears belle Helene, queen of puddings, Genoese sponge, and chocolate roll.
